Tocino

Spanish for "bacon," tocino in the Philippines is marinated, cooked pork that has a distinctive sweet flavor and red color. Tocino is traditionally served for breakfast or lunch in the Philippines in combination with sinangag (garlic rice) and itlog (eggs).

Ingredients

  • 2 Tbsp (30 ml) anise wine
  • 2 Tbsp (30 ml) annatto water
  • 2 Tbsp (40 g) salt 
  • 4 Tbsp (50 g) sugar
  • Pinch of saltpeter (potassium nitrate)
  • 2 lbs (1 kg) pork, sliced into ¼-in (6-mm) thick pieces
  • Vegetable oil, as needed

Directions

  1. Whisk together anise wine, annatto water, salt, sugar, and saltpeter in a bowl.
  2. Add pork to the bowl, stirring to coat.
  3. Cover bowl and let rest in the refrigerator for three days.
  4. Pour vegetable oil into a skillet set over medium heat.
  5. Add pork to the hot oil and stir-fry until cooked through.
  6. Serve tocino hot.
