Tocino
Spanish for "bacon," tocino in the Philippines is marinated, cooked pork that has a distinctive sweet flavor and red color. Tocino is traditionally served for breakfast or lunch in the Philippines in combination with sinangag (garlic rice) and itlog (eggs).

Ingredients
- 2 Tbsp (30 ml) anise wine
- 2 Tbsp (30 ml) annatto water
- 2 Tbsp (40 g) salt
- 4 Tbsp (50 g) sugar
- Pinch of saltpeter (potassium nitrate)
- 2 lbs (1 kg) pork, sliced into ¼-in (6-mm) thick pieces
- Vegetable oil, as needed
Directions
- Whisk together anise wine, annatto water, salt, sugar, and saltpeter in a bowl.
- Add pork to the bowl, stirring to coat.
- Cover bowl and let rest in the refrigerator for three days.
- Pour vegetable oil into a skillet set over medium heat.
- Add pork to the hot oil and stir-fry until cooked through.
- Serve tocino hot.
