  1. Pour cooking oil into a large pot set over medium heat.
  2. Add garlic, ginger, and onion to the hot oil and sauté for about 5 minutes until fragrant and beginning to brown.
  3. Add clams and just enough water to cover them.
  4. Bring mixture to a boil, cover pot, reduce heat, and simmer for 5–8 minutes or until clam shells open.
  5. Stir in green onions and continue simmering for 2 minutes.
  6. Ladle soup into serving bowls and serve hot with fish sauce and black pepper on the side.

  • For more flavor, reduce the amount of water used.
