These oval-shaped puff-pastry cookies are very popular in the Philippines, where they are eaten as a dessert or snack. Originating in Cebu, they are now popular throughout the islands, particularly in the Visayas Islands. Made of little more than flour, sugar, shortening, and yeast, these cookies are loved primarily for their flaky layers and crisp texture. Recipe Servings: Serves 6–8

Ingredients
- 4 cups (480 g) all-purpose flour
- 1/2 cup (100 g) sugar + sugar for garnish
- 1 tsp (5 ml) salt
- 1/4 cup (48 g) + 3/4 cup (140 g) shortening
- 1/4 cup (60 ml) oil
- 1 egg
- 1 tsp (5 ml) instant yeast
- 1 Tbsp (15 ml) vanilla extract
- 1 cup (240 ml) water
- 1 cup (120 g) cake flour
Directions
- Preheat oven to 350°F (175°C).
- Grease a baking sheet.
- In a bowl, mix together flour, sugar, salt, 1/4 cup (48 g) shortening, oil, egg, yeast, vanilla extract, and water.
- Knead until dough is smooth and elastic. Divide into 2 portions and set aside.
- In a separate bowl, mix together 3/4 cup (140 g) of shortening with cake flour. Divide into 2 portions.
- Oil and lightly flour a work surface. Roll out each portion of dough.
- Spread shortening mixture onto each piece of dough. Fold each piece of dough in half over shortening mixture.
- Oil top of dough. Set aside to rest for 15–20 minutes.
- On an oiled board, roll out dough until thin. Brush dough with oil and roll tightly. Brush roll with oil. Set aside to rest for 10–15 minutes.
- Cut slices off of each dough roll. Brush each slice with oil and allow to rest for 10 minutes.
- Roll out each slice of dough.
- Dip one side in sugar and place sugar side up on baking sheet.
- Bake for 10–12 minutes.
- Sprinkle with sugar.
