Otap (Puff Pastry Cookies)

Oval-shaped puff pastry cookies known as otap are very popular in the Philippines, where they are eaten as a dessert or snack. Originating in Cebu, they are now popular throughout the islands, particularly in the Visayas Islands. Made of little more than flour, sugar, shortening, and yeast, these cookies are loved primarily for their flaky layers and crisp texture.

Ingredients

  • 4 cups (480 g) all-purpose flour
  • ½ cup (100 g) sugar, plus extra for topping
  • 1 tsp (5 ml) salt
  • 1 cup (188 g) shortening, divided
  • ¼ cup (60 ml) vegetable oil, plus extra for greasing and brushing
  • 1 egg
  • 1 tsp (5 ml) instant yeast
  • 1 Tbsp (15 ml) vanilla extract
  • 1 cup (240 ml) water
  • 1 cup (120 g) cake flour

Directions

  1. Preheat oven to 350°F (175°C) and grease a baking sheet.
  2. Combine flour, sugar, salt, ¼ cup (48 g) shortening, vegetable oil, egg, yeast, vanilla extract, and water in a large bowl to form a dough.
  3. Knead dough until it is smooth and elastic.
  4. Divide dough into two equal portions and set aside.
  5. Mix together ¾ cup (140 g) of shortening and cake flour in a bowl.
  6. Divide mixture into two equal portions.
  7. Roll out each portion of dough onto a floured work surface. 
  8. Spread shortening mixture onto each piece of dough.
  9. Fold each piece of dough in half over shortening mixture.
  10. Grease top of dough with vegetable oil and let rest for 15–20 minutes.
  11. Roll out dough on a greased surface until thin.
  12. Brush dough with vegetable oil and roll tightly.
  13. Brush roll with vegetable oil and let rest for 10–15 minutes.
  14. Cut slices off of each dough roll.
  15. Brush each slice with vegetable oil and let rest for 10 minutes.
  16. Roll out each slice of dough. 
  17. Dip one side of dough in sugar and place sugar side up on baking sheet.
  18. Bake for 10–12 minutes.
  19. Remove cookies from oven and sprinkle with sugar.
