Monay Rolls

Monay bread is popular as a snack—called merienda in Tagalog—and for breakfast. These classic Filipino rolls are delicious when warm. Serve them plain, or with butter and jam. Monay bread is great with savory dips and for sandwich fillings, too. Recipe Servings: Serves 4

Ingredients

  • 4 cups (480 g) bread flour
  • 1 1/2 tsp (7.5 ml) salt
  • 1/2 cup (63 g) powdered milk
  • 1 Tbsp (15 ml) dried yeast
  • 1 1/2 cups (350 ml) warm water
  • 1/2 cup (100 g) sugar
  • 2 Tbsp (30 ml) melted butter
  • 3 egg yolks
  • 1/4 cup (60 ml) chopped parsley
  • 2 Tbsp (30 ml) lemon juice

Directions

  1. Combine flour, salt, and powdered milk in a mixing bowl.
  2. Mix yeast with warm water in another bowl. When yeast is activated with bubbles coming up, add sugar and stir to dissolve.
  3. Add melted butter and 2 yolks.
  4. Make a dent in the center of flour mixture, and gradually pour in butter mixture.
  5. Knead dough into a pliable ball. Cover with damp dishcloth and leave for 2 hours.
  6. Preheat over 375°F (190°C). Grease a baking tray.
  7. Knead dough for 5 minutes, roll into a log, and cut into 1/2-inch (1.25-cm) thick rounds. Place on tray.
  8. Brush rounds with remaining yolk.
  9. Bake for 20 minutes, until golden brown.
