Monay (Milk Bread)
Monay is a type of bread made with flour, powdered milk, yeast, and egg yolks. A popular merienda, meaning "snack" in Tagalog, it also is eaten for breakfast. These classic Filipino rolls are delicious when warm, often enjoyed plain or spread with butter and jam. Monay is great with savory dips and for sandwich fillings, too.

Ingredients
- 4 cups (480 g) bread flour
- 1½ tsp (7.5 ml) salt
- ½ cup (63 g) powdered milk
- 1 Tbsp (15 ml) dried yeast
- 1½ cups (350 ml) warm water
- ½ cup (100 g) sugar
- 2 Tbsp (30 ml) melted butter
- 3 egg yolks, divided
- ¼ cup (60 ml) chopped parsley
- 2 Tbsp (30 ml) lemon juice
Directions
- Mix together flour, salt, and powdered milk in a large bowl.
- Stir together yeast and warm water in a small bowl.
- Once yeast is activated with bubbles coming up, add sugar and stir to dissolve.
- Whisk melted butter and 2 egg yolks into yeast mixture.
- Make a dent in the center of flour mixture and gradually pour in the butter-yolk mixture, mixing to form a dough.
- Knead dough into a pliable ball, cover it with a damp dishcloth, and let rest for 2 hours.
- Preheat oven to 375°F (190°C) and grease a baking sheet.
- Knead dough for 5 minutes, roll into a log, and cut into ½-inch (1.25-cm) thick rounds.
- Place rounds on greased baking sheet.
- Whisk remaining yolk and brush rounds with it.
- Bake for 20 minutes, until golden-brown.
