Kare-Kare (Oxtail Stew)

A special-occasion beef and vegetable stew enriched with peanuts, kare-kare is normally served at birthdays, anniversaries, and baptisms. Most modern recipes, including the one that follows, use peanut butter instead of freshly ground peanuts, and cooks who are pressed for time can buy pre-made kare-kare mixes for the sauce.

Ingredients

  • 3 Tbsp (45 ml) vegetable oil
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 3 lbs (1,361 g) oxtail, chopped
  • 2 cups (480 ml) water, more as needed to prevent stew from drying out
  • 3 eggplants, sliced
  • 10 long green beans, cut into 3-inch (7-cm) pieces
  • 1 banana blossom, chopped
  • 2 oz (60 ml) annatto
  • 1/3 tsp (1.5 ml) salt
  • 7 Tbsp (100 ml) peanut butter
  • 2 bunches bok choy, chopped

Directions

  1. Pour vegetable oil into a large skillet set over medium heat.
  2. Add garlic and onion to the hot oil and sauté until lightly browned.
  3. Add cubed beef and sauté until browned.
  4. Add water, bring to a boil, reduce heat, and simmer for 2–3 minutes.
  5. Add eggplant and simmer for 2–3 minutes.
  6. Add green beans and banana blossom, simmering for 2–3 minutes.
  7. Stir in annatto, salt, and peanut butter.
  8. Add bok choy and cook just until tender.
  9. Serve stew hot.
