Itlog na Maalat Ensalada (Salted Duck Egg Salad)

Itlog na maalat, or salted duck eggs, were introduced into Filipino cuisine by Chinese immigrants. Traditionally buried in salt for a few weeks, the shells of these eggs are dyed a festive red (colored to differentiate them from regular ones) and present a golden yolk nestled in a solid egg white when halved. This traditional Filipino delicacy is often served in salads or with rice porridge.

Ingredients

  • 2 medium tomatoes, diced
  • 2 large shallots, chopped
  • 1 medium cucumber, diced
  • 3 Tbsp (45 ml) lime juice
  • 1 red chile pepper, chopped
  • ½ tsp (2.5 ml) ground black pepper
  • 4 salted duck eggs, cut into bite-size chunks
  • 2 Tbsp (30 ml) chopped green onions

Directions

  1. Place tomatoes, shallots, and cucumber in a salad bowl.
  2. Add lime juice, chile pepper, and black pepper to bowl, tossing to combine.
  3. Stir in eggs gently.
  4. Sprinkle salad with green onions and serve.
