Itlog na Maalat (Salted Duck Eggs)

Itlog na maalat, or salted duck eggs, were introduced into Filipino cuisine by Chinese immigrants. Buried in salt for a few weeks, the shells of these eggs are a festive red (colored to differentiate them from regular ones) and present a golden yolk nestled in a solid egg white when halved. This traditional Filipino delicacy is served with rice porridge. Recipe Servings: Serves 4

Ingredients

  • 4 salted duck eggs, chunked
  • 2 medium tomatoes, diced
  • 2 large shallots, chopped
  • 1 medium cucumber, diced
  • 3 Tbsp (45 ml) lime juice
  • 1 red chili pepper, chopped
  • 1/2 tsp (2.5 ml) black pepper
  • 2 Tbsp (30 ml) green onions, chopped

Directions

  1. Cut duck eggs into chunks.
  2. Place tomatoes, shallots, and cucumber in a salad dish.
  3. Add lime juice, chili pepper, and pepper. Toss well with vegetables.
  4. Gently mix in eggs.
  5. Garnish with green onions and serve.
