Gising Gising
A flavorful and somewhat spicy green bean and ground pork dish, gising gising is made with coconut milk to give the main ingredients a creamy flavor and shrimp paste for extra bite. The addition of chile peppers can make the dish quite spicy depending on the quantity used; many Filipinos who prefer a milder dish leave these out.

Ingredients
- 2 Tbsp (30 ml) vegetable oil, more as needed for frying
- 3 garlic cloves, crushed
- 1 medium onion, minced
- ½ lb (227 g) ground pork
- ½ tsp (2.5 ml) ground black pepper
- 1½ Tbsp (22.5 ml) shrimp paste
- 3 chile peppers, chopped (optional)
- 2 cups (480 ml) coconut milk
- 1 lb (453 g) green beans (baguio beans), ends trimmed and chopped to ¾-inch (2-cm) length
- Cooked rice, as needed for serving
Directions
- Pour vegetable oil into a large saucepan set over medium heat.
- Add garlic and onion to the hot oil and sauté.
- Add pork and cook for 3–5 minutes, or until it loses its pink color and turns a medium brown. Add more vegetable oil to prevent burning, if necessary.
- Add ground black pepper, shrimp paste, and chile peppers (if using), stirring to combine well.
- Pour coconut milk into saucepan, bring to a gentle boil, and simmer for 20 minutes.
- Add green beans and cook for 5–7 minutes, stirring occasionally.
- Remove saucepan from heat and transfer gising gising to a serving dish.
- Serve gising gising hot with rice.
