Ginataan

Ginataan or ginataang is the Filipino expression for “cooked with coconut milk,” which encompasses a wide variety of coconut soups from sweet to savory. In northern parts of the Philippines, various sweet desserts and snacks are just called ginataan. This ginataan recipe uses jackfruit, sweet potato and banana simmered in creamy coconut milk. No whipped cream or dairy is used this satisfying dessert soup. Ginataan can be served warm or cold. Apart from a rich mouthfeel, coconut milk or its cream offers medicinal benefits, especially in tropical areas where food spoils easily. Coconut milk is antibacterial, antiviral and anti-inflammatory. Recipe Servings: Serves 4

Ingredients

  • 1 cup (110 g) canned jack fruit, drained and chopped
  • 1 cup (135 g) sweet potato, cubed
  • 1 cup (120 g) banana, cubed
  • 4 cups (960 ml) water
  • 2 Tbsp (30 g) rock sugar
  • 1/2 tsp (2.5 g) salt
  • 1/2 cup (120 ml) coconut cream

Directions

  1. In a large pot, boil water and sugar over medium-high heat.
  2. Add jack fruit and sweet potato. Bring to a boil again.  The reduce heat and simmer 15 minutes.
  3. Add bananas and salt; simmer 10 minutes.
  4. Add coconut cream and simmer 10 minutes.
  5. Taste and adjust for sweetness.
