Ensaladang Mangga (Green Mango Salad)
Ensaladang mangga, or green mango salad, is a vibrant Filipino dish that perfectly balances the flavors of sour, salty, sweet, and spicy. Made with thinly sliced unripe mangoes, onions, and tomatoes, it is often seasoned with fermented shrimp paste, which adds a distinct umami depth. Historically, the dish reflects the Filipino love for bold, contrasting flavors and the ingenuity of using locally abundant green mangoes. It is a common accompaniment to grilled or fried meats and fish, elevating meals during family gatherings, fiestas, or casual outdoor picnics. Ensaladang mangga exemplifies the Filipino palate's appreciation for fresh, tangy, and savory combinations, making it a beloved staple in the nation's cuisine.
