Atchara

Atchara, also called achara or atsara, is a Filipino pickle made primarily of papaya. Atchara commonly accompanies fried or grilled meats, such as pork barbecue. Mixed vegetables are typically included in this preparation. Recipe Servings: Serves 6

Ingredients

  • 1 green papaya, grated
  • 1 bell pepper, sliced
  • 1 carrot, sliced
  • 1 cauliflower, cut into small pieces
  • 1 gingerroot, sliced
  • 5 shallots, peeled
  • 3 Tbsp (45 ml) coarse salt
  • 3 cups (720 ml) vinegar
  • 1 1/2 cups (150 g) sugar
  • 2 tsp (10 ml) salt

Directions

  1. Combine papaya, peppers, and carrots. Toss with salt and let sweat for 1 hour. Drain and dry thoroughly.
  2. Blanch and drain cauliflower.
  3. Combine all prepared vegetables in a bowl or sterilized jar.
  4. In a non-reactive pot, combine vinegar, salt, and sugar. Bring to a boil and cook for 2 minutes. Pour over vegetables.
  5. Seal for storage or cover and refrigerate until needed.
