Tocino
Spanish for "bacon," tocino in the Philippines is marinated, cooked pork that has a distinctive sweet flavor and red color. Tocino is traditionally served for breakfast or lunch in the Philippines in combination with sinangag (garlic rice) and itlog (eggs). Recipe Servings: Serves 4–6

Ingredients
- 2 lb (1 kg) pork, sliced into 1/4-in (6-mm) thick pieces
- 2 Tbsp (30 ml) anise wine
- 2 Tbsp (30 ml) annatto water
- 2 Tbsp (40 g) salt
- 4 Tbsp (50 g) sugar
- Pinch of saltpeter (potassium nitrate)
- Cooking oil, as needed
Directions
- Combine all ingredients except pork and oil.
- Lightly coat pork with mixture, distributing evenly.
- Refrigerate, covered, for 3 days.
- To cook, heat oil in a frying pan. Add pork and a little water. Fry until cooked through.
