Kare-Kare (Oxtail Stew)
A special-occasion pork and vegetable stew enriched with peanuts, kare-kare is normally served at birthdays, anniversaries, and baptisms. Most modern recipes, including the one that follows, use peanut butter instead of freshly ground peanuts, and cooks who are pressed for time can buy pre-made kare-kare mixes for the sauce. Ingredients
- 9 oz (250 g) pork, cubed
- 1 banana flower, chopped
- 2 bunches bok choy, chopped
- 10 long green beans, cut into 3-inch (7-cm) pieces
- 3 eggplants, sliced
- 3 Tbsp (45 ml) oil
- 1/3 tsp (1.5 ml) salt
- 1 onion, chopped
- 2 cloves garlic, minced
- 7 Tbsp (100 ml) peanut butter
- 2 cups (480 ml) water
- 2 oz (60 ml) annatto
Directions
- Sauté garlic in oil until lightly browned.
- Add pork and sauté until browned.
- Add water and simmer for a few minutes.
- Add eggplant and simmer for a few minutes.
- Add string beans and banana blossom. Simmer a few minutes longer.
- Add annatto, salt, and peanut butter. Stir well.
- Add bok choy. Stir and cook just until bok choy is tender.
- Serve hot.
