Bistek (Beef Steak)

The Filipino version of beef steak, bistek is thinly sliced beef marinated in soy sauce and the juice of an indigenous citrus fruit called calamansi. Bistek is typically fried and served with caramelized onions. Recipe Servings: Serves 6

Ingredients

  • 1 lb (453 g) beef, thinly sliced
  • 1/4 cup (60 ml) calamansi juice
  • 1/4 cup (60 ml) dark soy sauce
  • Pepper to taste
  • 2 cloves garlic, minced
  • 2 onions, sliced
  • 2 Tbsp (30 ml) oil

Directions

  1. In a nonreactive dish, combine calamansi juice and soy sauce. Add beef, garlic, and pepper. Marinate, refrigerated, for 30 minutes.
  2. Heat oil in a heavy, non-reactive frying pan. Fry onions until translucent. Drain and keep warm.
  3. Reheat oil. Fry beef in batches, removing meat as it browns.
  4. When all meat is cooked, pour marinade into the same pan and boil for 1 minute.
  5. Arrange beef on a serving dish. Top with onions.
  6. Pour sauce over all, and serve immediately.
