Ginataan

Ginataan or ginataang is the Filipino expression for “cooked with coconut milk,” which encompasses a wide variety of coconut soups from sweet to savory. In northern parts of the Philippines, various sweet desserts and snacks are just called ginataan. This recipe uses jackfruit, sweet potato and banana simmered in creamy coconut milk. No whipped cream or dairy is used for this satisfying dessert soup. Ginataan can be served warm or cold. Apart from a rich mouthfeel, coconut milk or its cream offers medicinal benefits, especially in tropical areas where food spoils easily. Coconut milk is antibacterial, antiviral, and anti-inflammatory.

Ingredients

  • 4 cups (960 ml) water
  • 2 Tbsp (30 g) rock sugar
  • 1 cup (110 g) canned jackfruit, drained and chopped
  • 1 cup (135 g) sweet potato, cubed
  • 1 cup (120 g) banana, cubed
  • ½ tsp (2.5 g) salt
  • ½ cup (120 ml) coconut cream

Directions

  1. Place water and rock sugar in a large pot and bring to a boil.
  2. Add jackfruit and sweet potato and return to a boil. 
  3. Reduce heat and simmer for 15 minutes.
  4. Add bananas and salt, simmering for 10 minutes.
  5. Add coconut cream and simmer for 10 minutes.
  6. Taste and adjust for sweetness.
  7. Serve warm or cold.
